The EVO brandy is called "Riserva" because, according to the law, it is aged in wooden barrels for at least 18 months. The barrels are barriques made of different types of wood, not necessarily from the first cycle.
Each type of wood contributes to giving the product a specific character. Depending on the year of production and the natural, unpredictable ripening of the product during aging, EVO may show slight color differences and differences in the organoleptic profile. This in turn contributes to emphasizing characteristics such as authenticity and artisanal distillery tradition. EVO contains no additional colorants. Its "nuance" is the result of storage in barriques. Through the type of treatment of the containers and the different types of wood used, organic substances and unexpected color components are transferred to this distillate. Thanks to novel processing techniques, EVO has an extremely low content of essential oils ("traces"). This promotes both drinkability and extraordinary tolerability. The innovative process also allows compliance with the legally permissible maximum levels for methanol.
