EVO Grappa Riserva and Brandy

EVO's brandy is called "Riserva" because, by law, it is aged for at least 18 months in wooden barrels. These barrels are barriques made from various types of wood, not necessarily from the first cycle. Each type of wood contributes to giving the product a specific character. Depending on the year of production and the natural, unpredictable maturation of the product during aging, EVO may show slight color differences and variations in its organoleptic profile. This, in turn, helps to emphasize characteristics such as authenticity and artisanal distillery tradition.
EVO contains no added colorants. Its "nuance" is the result of aging in barriques. Through the treatment of the containers and the different types of wood used, organic substances and unexpected color components are released into this distillate. Thanks to novel processing techniques, EVO has an extremely low content of essential oils ("traces"). This promotes both drinkability and extraordinary tolerability. The innovative process also allows compliance with the legally permissible maximum levels for methanol.

EVO FUMO - Grappa Riserva

The unique feature of FUMO is that it combines the strong, smoky character of peat (the pomace is smoked before distillation) with the smoothness of cherry. FUMO is a blend and the result of combining several spirits from different grape varieties and vintages. Each individual variety contributes to giving the product a specific characteristic. FUMO may vary slightly in color and aroma from batch to batch, and due to its originality, slight sedimentation may occur. This helps to emphasize the absolute authenticity and artistry of the product.
