Romance, sweetness, tenderness and elegance: you will be surprised by the finesse of its red fruit aromas. Its ruby red colour and fruity aromas are obtained by short maceration of the grape skins and from grape juice.

50% Pinot Noir / 50% Pinot Meunier.

Dosage Brut - Extra Brut (between 4g and 8g/L).
100% homemade shipping dosage with pure cane sugar aged in oak barrels.

Viticulture

  • Cumières cultivation area.
  • Clay-limestone soil.
  • From a 15-30-year-old vineyard.
  • Manual harvesting with a strict selection of grapes.
  • Integrated viticulture program and treatment with Norwegian algae

Vinification

  • Production using the "Saignée" method after 24 to 48 hours.
  • Long alcoholic fermentation at 16°C.
  • Later tapping in February.
  • No malolactic fermentation.
  • Without fining and filtration.
  • Aged for 5 years in the cellar.
  • Only the juices from the very first presses are used.
  • First fermentation in temperature-controlled stainless steel tanks.

 

Tasting

Champagne with a ruby red colour and elegant bubbles. The nose reveals aromas of fresh fruit, strawberries and raspberries. The palate has finesse and red fruit aromas.

Serving suggestions:

To be enjoyed very fresh as an aperitif; ideal with "Pink Biscuits from Reims" or a red fruit dessert.
