The Italian name \"chinotto\" is derived from \"China.\" It is believed that the plant was imported from there to Liguria in the late 16th century. Given that there is no trace of this plant in the Far East and that, with a few exceptions, it is only cultivated in Italy, it is more likely that the plant originated from a mutation of fruits in the Mediterranean region. The ripe fruit is small, orange, and flattened at the ends. O de V obtains its aroma through cold maceration, by marinating the Chinotto peel in high-proof vodka for 40 days. The product is then diluted with de-ionized and demineralized water to obtain the desired alcohol content (40%).
